A recipe that I MUST share. It is to die for amazing. I have made it twice now, I will post the most recent way because it was a little healthier. Original recipe I got from here but I changed it up a bit.
Cauliflower Crust Pizza
Preheat oven to 450
First thing you want to do is take a half a head of cauliflower and "rice it". This is super easy. I used a cheese grater (a little messy) just grate it up, throw it in the microwave for 8 minutes. No water, just the cauliflower.
Next thing is to season it up a bit. I used these ingredients. You could basically add whatever you want, I omitted the cheese the original recipe called for because I didn't feel like I needed it in the crust but I might "need" some on top :) Pick your battles. Along with seasonings I added one whole egg. Mix it up real good.
I covered my pizza dish with foil and sprayed it with PAM, then pressed the "crust" onto the pan. It will look like this. Place in preheated oven for 15 minutes.
Take a photo of your kid. Make sure he looks as excited as you are about the yummy pizza you are about to make, while enjoying his morning waffles!
Chop up some veggies (these were my toppings of choice)
I sauteed them while the crust was baking. I like them better this way. To each their own.
Once crust is done, turn on your broiler to high. While that is heating up top it with whatever sauce you would like. I chose to use no salt added tomato sauce.
I threw on the veggies and used about 1/4 C of reduced fat cheddar cheese and reduced fat mozzerella cheese to top it with.
Put it under the broiler for 3-4 minutes. It gets all melty and gooey! Mmmmm!
And that my friends is my new favorite meal. It tastes NOTHING like what you would think it would taste like.
