So first of all skiing last weekend was a BLAST! I haven't laughed that hard in a VERY long time. It was something that my husband and I desperately needed. More on that later. Right now I wanted to share with you all something new...
A couple of months ago a friend of mine was talking about these wraps that she was selling. I decided I needed to try one out. I am a sucker for wraps and honestly LOVE the way they make me feel. With the dieting and lifestyle that I live sometimes I feel like it does more damage to my body than good so a nice detox is always something that I am interested in. I had her come over and do a wrap on myself, my sister and my niece. Holy cow the next day, I felt absolutely amazing. I really felt my body detoxifying. I decided that I just had to get some more wraps. I bought a box of four and used them in the course of a few weeks. A couple of weeks ago I was contacted by my friend about possibly becoming a distributor. I was hesitant because I am not sure how much time I will have to invest in distributing, but honestly after using the products I decided that I just had to spread the word. Snow day!
I am SO looking forward to this weekend. In almost 12 years of marriage, our "dating" has taken a major backseat (like its non existent). Especially over the last few years. In fact ironically we dated each other more when we lived in another country. When we moved back to Utah I was just sure that I would FINALLY get to really date my husband again with all this family around. No such luck. Everyone has a life here, everyone is busy. Humph! It is hard to find babysitters, and time, and money but we have had a really rough year, and dang it we NEED this so bad so we decided to just say forget it. We shouldn't spend the money but we just don't care. We are going to Park City for the weekend, to be ALONE and to do some skiing. I am beyond excited for this time. Thankfully my sisters agreed were forced to each take one kid. I will hopefully remember to take my camera.. and hopefully won't get hurt skiing. I haven't been in YEARS, the last time I went skiing was probably.... 14 years ago. I have been snowboarding since then but not skiing. It just so happens we are getting a bunch of fresh snow all week so skiing should be a blast on Saturday, and hopefully with some fresh powder my bum won't get too bruised ;)

WIN/WIN
Just a little update... after MUCH thought I have decided to wait and compete in either April or June. There has been so much going on in my own head, and I am working on getting that all sorted out. Its a process. One that I will probably never speak of openly because well... lets face it there has to be SOME things that are kept private, right?!? This is one of those things that I need to keep private. But it is something that hopefully one day I will be able to look back on and laugh instead of cry. I want to feel like this girl again.
So, back to the drawing board. I am still working my bootay off (hopefully, ha ha ha). I plan to finish Insanity and possibly even hit it up for a second round, along with starting on phase 2 of the trainer, and continuing onto phase 3. Lots of exciting things, lots of hard work, and hopefully at the end of all of this another pretty lady to adorn my shelf!

What a day!
Well today went from good, to bad! I got up, kicked Shawn T's butt in Insanity. I owned him this morning. I was dripping in sweat and it felt SO good. My daughter was coughing last night and when she woke up this morning she was a bit warm and said that her head hurt and she didn't feel good. LOVELY. Good thing is there wasn't school today. Bad thing is that I had to work, and she was looking forward to spending the day at my sisters house. I showered and got ready for the day thinking that she probably was just coming down with a little cold, I could drug her up and she would be good to go for a few hours so I could get some work done. Nope. She started throwing up. Poor little thing. She has literally spent the day just laying around, and puking. She ate around 1:30 and kept it down for a few hours but it didn't last long. I am hoping that she will feel all better tomorrow and no one else will get it. Needless to say work had to live without me today. I am sure they survived ;)
A recipe that I MUST share. It is to die for amazing. I have made it twice now, I will post the most recent way because it was a little healthier. Original recipe I got from here but I changed it up a bit.

Cauliflower Crust Pizza
Preheat oven to 450
First thing you want to do is take a half a head of cauliflower and "rice it". This is super easy. I used a cheese grater (a little messy) just grate it up, throw it in the microwave for 8 minutes. No water, just the cauliflower.
Next thing is to season it up a bit. I used these ingredients. You could basically add whatever you want, I omitted the cheese the original recipe called for because I didn't feel like I needed it in the crust but I might "need" some on top :) Pick your battles. Along with seasonings I added one whole egg. Mix it up real good.
I covered my pizza dish with foil and sprayed it with PAM, then pressed the "crust" onto the pan. It will look like this. Place in preheated oven for 15 minutes.
Take a photo of your kid. Make sure he looks as excited as you are about the yummy pizza you are about to make, while enjoying his morning waffles!
Chop up some veggies (these were my toppings of choice)
I sauteed them while the crust was baking. I like them better this way. To each their own.
Once crust is done, turn on your broiler to high. While that is heating up top it with whatever sauce you would like. I chose to use no salt added tomato sauce.
I threw on the veggies and used about 1/4 C of reduced fat cheddar cheese and reduced fat mozzerella cheese to top it with.
Put it under the broiler for 3-4 minutes. It gets all melty and gooey! Mmmmm!
And that my friends is my new favorite meal. It tastes NOTHING like what you would think it would taste like.

My funny Valentines...
Its been a week... or more since I last blogged! Sheesh, where does the time go? I will tell you where, RIGHT DOWN THE DRAIN! I swear I feel like I am flying around and nothing is getting done and now February is almost over with, and I am SO not ready for it to end.
My husband has been out of town for what seems like forever but Valentines day was still good. He surprised me with a dozen beautiful roses, some chocolates, and balloons (all of which I forgot to take pictures of). My kids made me the sweetest cards. I felt very loved.
Yes, I know I have the sweetest kids EVER. (most days). Insanity is still going strong. It is still wiping me out, and I feel like I got my butt handed to me every time it ends. I just started week 4. Right now I am 5.5 weeks out of the competition. I am feeling unsure if I will be competing in March. The last month has been REALLY rough for me. Lots of stuff going on in my life. Although I have been still focusing on my diet and doing pretty well MOST of the time, I don't feel mentally ready. Although I am not mentally ready to make a decision on that yet either, ha ha ha! SO... plan is to train like I am going to and see how I feel.
How is everyone? I miss you guys! Hopefully I can get back into the blog world, though I try to read yours everyday its been hard to find the time to sit and write! I have tried a few recipes that I can't wait to talk about so I will try to get to that in the next day or two!

Insane!
I haven't done a fitness update in a while. A couple of weeks ago my husband was watching TV when he called me into the room to show me how awesome this infomercial was, it was Insanity! He said "we should get this and do it together". So.. next day at work I mentioned it and my co-worker said "Don't go buy it, just ask Janetha if you can borrow this copy" and she pulls out the whole program from her filing cabinet. SCORE! The next night we started Insanity. We being ME. LOL! My husband made it through about 1/4 of the first workout, next day made it through 1/2 of the second workout, and then went out of town! So here is my update. HOLY KICK MY BUTT! I am on week two, and still getting exhausted with every workout. Its... INSANE but I am loving it and feel like I am already seeing results. It came at the perfect time too because I had to work 9-5 last week, and my husband was out of town so I really had no time to go to the gym even if I had wanted to. I still plan on completing the Livefit trainer. I am about 7 weeks out from my competition, I have 7 weeks left of Insanity, and the last four weeks I will probably do phase 3 of the trainer and incorporate Insanity into it as my two a days. Depending on how I am leaning out of course.
Have any of you ever done Insanity before? I always wanted to try it but to be honest am not always good about working out at home, however this has become a fun thing because my daughter likes to workout with me. So, she reminds me every day that we need to "work out". She rushes upstairs to put on her "workout clothes", comes down with a bottle of water, jumps around and talks about how exhausted she is then we head upstairs and she will say "now I am in the mood to eat something healthy!!!" I love it!

I miss: Rock Climbing. I really need to find some climbing buddies

I hear: My kids bickering. Good times.

I crave: a warm gooey chocolate chip cookie
