Shrimpy-licious

So last night I got a little adventurous for dinner. I didn't make the usual Spaghetti, or tacos which happen to be our "go to's" on a much too regular basis... I bought some shrimp, some zucchini and threw it in a pan with some Tropical Traditions Coconut Oil, garlic and some seasoning and threw it on top of some cooked spaghetti (okay so I didn't get that far away from our "norm") that was flavored with a little butter, garlic and parsley. I have to say it was DELISH! The husband even seemed to be a little impressed. And THAT is not something that I can pull off very often at least not in the kitchen ;) Ha ha!

I am still trying to find that balance between work, mommy, wife, and the GYM. I really appreciate the advice and tips from readers. It does help. I swear I will get it all together!

We used to live overseas in Cyprus. We spent four years there, met some AMAZING friends and literally had the times of our lives. Since coming back to the states we have been pretty good about keeping in touch with our friends we made in Cyprus. I am so stoked right now. Two of these amazing women that I met and I have decided to do a 1/2 marathon together in April. One lives in New York and the other in Texas. We are going to meet in the middle somewhere and make it happen. I am so excited. I cannot wait to see them again! I have a lot of training to do so I really need to find the time to do it. Did I mention that I hate running? Yeah. Good times. :)

    I know what you mean about trying to find jealous! Now this semester I have 5 classes, and 2 jobs. Plus the gym, cooking, studying, homework, etc..ahhh

  2. oh that sounds good!!!!!
    my "go-to"meals aresame as yours-sketti or tacos...but here lately its been "pizza" bagels...half a whole wheat bagel,1-2tabe;spoons pizza suace or spaghetti suace...sprinkle 1/4cup 2% cheese on top and whateevr else you want-pop in oven on broil for 2-3 minutes...dinner is ready in less than 10 minutes!!!

    anyways,it sounds exciting about meeting up for a 1/2 marathon with good friends-it will make all the training well worth it!!!!

  3. Nom nom nom- I love shrimp! That dish sounds great, especially with the TT coconut oil! I have some of that I need to use- maybe after competition!

    I think being a hot wife, fit mama, working girl, friend, sibling, etc. is a LOT and I think mom's are the superheros of our time. You'll get in the swing of things and little by little find your routine again with the gym:) I think we all strive for that balance and it takes a continual effort on our parts as we incur more and more responsibilities in life. In other words-- I think we'll ALWAYS be searching for that balance:)

    I think that is SO cool that you lived overseas! What an experience! I'm the ONLY one in my family that has not been overseas. My parents and sister went on several trips but because of stupid grad school, I missed out on going because I couldn't take off 2-weeks of class. Now that I look back, I should have gone and just graduated later. Ah well, maybe its for the best so that I can experience it for the first time with my sweet hubbs:)

    That's an awesome goal to do the 1/2 marathon with friends! I'm excited for you! Like you, I do NOT like running but I've always admired runners and their discipline and determination. Go get em, Tiger!:)
