Overnight Oatmeal

My newest obsession for a couple of reasons. It is A-M-A-Z-I-N-G and it is ready to pop in the microwave after my morning cardio.

1/3 C Quick Oats
2/3 C Water
1-2 Tbsp Sugar free syrup (I love the Torani brown sugar cinnamon)
1 Packet Stevia
dash of cinnamon
1 scoop ground flax (optional)

Mix it all together in a tupperware dish and let sit in the fridge overnight. Pop it in the microwave for 90 seconds. Stir and if it isn't the consistency you like heat it up a little longer. I do not add milk or anything to it, I like it thick, but you could. SO GOOD.

LA Show


Is over... and I am glad. I almost didn't even do it, I am however glad I did. I met some really amazing women (as always) and got to catch up with some old friends, some new friends and of course get a practice run with my posing before next weekend. All in all, a great experience. The competition was tough, A-M-A-Z-I-N-G women in my class, 12 girls in all and I am honored to have come in 3rd place. I didn't order pictures from this show since I am doing one next weekend. I only have the few that were taken by Bjay and my girlfriends.

Last week was one of the most stressful weeks I have had in a long time. I didn't feel ready for this show, at all. My week started with a carb depletion. Never easy. Usually in this part of the diet I drop a significant amount of weight. I said USUALLY. This time I was not so lucky. I also had a wonderful monthly visitor decide to make an appearance. One that hasn't been around for a couple of months... and one that decided to stay for almost 5 whole days... and one that was very UN-WELCOMED. One that stupid visitor decided to leave I think all of the stress, and the water retention fell off and I feel like I finally got my body where I needed it to be. THE DAY BEFORE THE SHOW. PHEW! After the show I gave myself a freebie. I went out to dinner and had a salad and shared a dessert with my friends. It was just what I needed. Now it is back to the grind. Twice a days at the gym, another depletion, and FOCUS on the end of this. VEGAS baby!

Judge me not...

I get asked a lot of questions. By a lot of people. Mostly about diet, exercise, supplements... etc. Lately I have been asked a question that has ME thinking, scary right? For those of you who don't really "know" me, I am Mormon. No I do not have horns, and I am and will always be my husbands ONLY wife. Now that thats out of the way... I have been asked not once but at least 3 times by 3 different people over the last couple of months what my church thinks of me doing these competitions. Good question. In my mind I have to say that for the most part I feel VERY accepted by almost everyone that shares my religion. My family is VERY supportive and my husband and my kids are my biggest fans. That is all that matters to me.

I don't do these competitions so that I can get on stage in an itsy bitsy bikini hoping to get attention or to be immodest. I am not up there trying to look sexy, or trying to sell anything to anyone. It is a sport to me. It is about being fit, working hard and having goals. In my real life, the more clothes I can have on the better. I don't even like going to the beach unless I can cover up. I am sure that there are those who may judge me, they may even look down on me because they don't understand what I do, how hard it is, the time, effort and money that goes into doing these competitions but that is okay, that is the way it is with anything. This is my passion, my hobby, my sport, my escape. This is who I am.

Guilty, really?

You know your a competitor when you feel GUILTY for eating a bite of FRUIT. STUPID. Anyway, that is not what this post is about. I tried a new recipe last night and I have to say it was pretty dang awesome! Thanks April once again for a fantastic recipe.

Egg White pancakes

1 C Egg whites
1/8 - 1/4 tsp baking powder
1/8 - 1/4 tsp cream of tartar
dash cinnamon
1 pkt Stevia (Truvia)

Mix it all up and cook like a pancake. Top with Syrup (I use sugar free syrup). I also added in 1 Tbsp ground flax. YUM. Tasted like French Toast to me!

This is my contest winning recipe (the contest that I never recieved my winnings from)... humph! Anyway, here it is for you Michelle!

Banana Bars

1/4 C Butter (or substitute with Applesauce)
1 1/2 C Sugar (I use baking splenda)
1 Egg
3 ripe bananas mashed (I heat mine for about 30 seconds in the microwave and blend with mixers to get them nice and smooth)
1 tsp vanilla
1 tsp cinnamon
1/4 tsp salt
1 1/2 tsp baking soda
2 1/4 C flour (I use 1 1/2 C oatmeal, blended into flour consistency and 3/4 C vanilla protein powder)
1 C sour cream (I use light of fat free)
1/2 c walnuts, chopped (optional)

Preheat oven to 325

Cream butter, and sugar. Add egg, banana, and sour cream. Mix well. Add vanilla, and cinnamon. Mix in dry ingredients. Add nuts. Pour into baking dish that has been sprayed with PAM (13 x 9). Bake for one hour or until toothpick comes out clean.

For the topping: It is realy good with cream cheese frosting. Like REEEEEAAAALLLLY good. However I opt for this...

2 tbsp butter melted, 2 tbsp splend brown sugar, 1 tsp cinnamon, and a handful of oatmeal. Crumble over the top. YUM!

Bake for 1 hour

The Gym, my second home

The gym is a very interesting place. I guess I don't always pay attention to my surroundings. Sometimes I am in "the zone" and honestly couldn't even tell you if I saw another person because I am so focused. Today however I was a little distracted and when I am distracted I people watch. Our gym is awesome. We have such a great mix of people. You have the group of men that are stuck in the 80's, and can't wait to tell you all about the new bar they found over the weekend, how the waitresses were practically naked, etc. Mullets, rolled up sleeves, sweatpants, the only thing missing is the headband and leg warmers. You have the group of young teens trying to impress the ladies, the ones that steal your machine and lay on it... while you stand there... staring at them... waiting for them to move... and they just lay there... resting... grrrr... the worst. You have that one guy who thinks he is the bees knees... walks around like he is the coolest thing ever, always has a new proposition for you because he is THAT cool. You have the cute little elderly woman who without fail is always sitting on the leg extension machine, makeup on, and every time we pass by with our walking lunges she laughs and says we look like the bobbsey twins. The girls who are there to impress, and of course the competitors... who are rapidly multiplying. There are so many now, it is fantastic. They inspire me daily. I love this place, I love my life!
